RNYC Chefs Themba and Sandile are currently working on a new menu for the Britannia Room which we hope to launch in February 2019. We are making, tasting and deciding on items such as prawn Rissoles, Thai style fishcakes made from fresh linefish, mini bunnies with homemade bread and several other items which we will leave as a surprise for now. Chefs are visiting our suppliers and the whole team is involved with the new menu look. We will keep some of the old popular items and we’d love to hear from you if you have any specific items you want us to add.
One of the ‘new’ items which will definitely be on the menu will be Chef Themba’s homemade Portuguese sauce which we will serve with our popular grilled prawns. Keep an eye on our specials board and let us know By popular demand – here is Chef Themba’s recipe for our Thai fishcakes with homemade Aoili. Adjust ingredients to taste and to quantity of fish you have available. We mix our fish with only a very small quantity of mashed potato – only enough to bind the fish and flavours. Thai fishcakes with homemade Aoili For the fishcakes: · We use fresh linefish which we clean, fillet and steam · Fresh garlic – crushed · Fresh ginger – finely grated · Lemon zest · Orange zest · Fresh chilli – finely chopped · Mashed potato · Salt and pepper to taste Method Mix steamed fish (with just enough mashed potato to hold the shape), ginger, lemon zest, orange zest, chilli, salt and pepper to form fishcakes. Cover in the sesame seed coating (see recipe below). For the sesame seed coating: · Chopped fresh coriander leaves · Chopped fresh spring onions – white and green parts – finely chopped · Fresh parsley · Sesame seeds Method Mix sesame seeds with parsley, coriander and spring onion and set aside Deep fry for 2 minutes in hot oil – just enough to change colour Serve with salad and homemade Aoili (see recipe below) Homemade Aoili: · 2 garlic cloves – crushed · 1 teaspoon salt · 2 egg yolks · 1 cup olive oil · 1 tablespoon lemon juice · 2 tablespoons wholegrain mustard · 1 tablespoon water Blend all together until you get a thick, white consistency. Keep in fridge for up to 2 days. |
